My twins have been such good eaters since the beginning of introducing solids. They would shovel in the veggies by the handful. They loved Indian curries with lamb and all kinds of adventurous foods. But unfortunately now they are entering the picky toddler phase. Some days they will eat everything I give them and then the next day they refuse to eat any of those same things again. Yes, I do on the very rare occasion let them eat cake but I try to limit their overall simple carb intake. (BTW, that was a silly reference to Marie Antoinette… although sometimes I feel like I’m bargaining with a frenzied rabble of 15 month old’s.) I hate that now I have to make them eat veggies so I am on new quest to find ways to present them in a delicious way.
Today I tried this new recipe of cheesy cauliflower bites. I wouldn’t go so far as to say they tasted just like tator tots but they were pretty tasty. Levi ate quite a few of them but Lily wasn’t a fan. Of course, I will try her again tomorrow since toddlers usually need 3 tries at a food before they truly know how they feel about it. I’ve also tried baked sweet potato fries, roasted carrots, steamed broccoli and green beans with bacon. These are all hit or miss options with the twins.
The one tried and true recipe that seems to stay within Lily and Levi’s graces is my spinach and tomato omelette. It includes fresh chopped spinach, chopped tomatoes, diced smoked sausage, cheddar cheese and chopped leeks for flavor. This is great since our 4 chickens are laying eggs out the wazoo right now- literally and figuratively.
